  1. I use two tiers of whetstones

400grit: quite rough, good for blunt knives, gives them a new edge

1000grit: fine, makes the edge sharp, for general use it's really good, probably equivalent sharpness to buying a quality knife out of the box

and if you really care for your knives

6000grit: really fine, gives it a laser edge, good for cutting proteins (meat, fish, etc), with an edge this fine it'll get blunt quickly when cutting hard objects and may chip quite easily if cutting into bones, use this for a sashimi slicer like yanigiba or sujihiki, but not as a fillet knife unless you want to sharpen often

using whetstones you won't need sharpening steels or gadgets, just some water and the stones, but it takes time to learn. good luck! =D

  2. i've tried setup 3 with just splits to single hooks.

i found it really good on metals, it doesn't alter their wobble or twisting action much and you get all the advantages of one big hook.

for some of the jap swimmers it seems to alter their action too much for my liking.

for instance the adagio there, i tried singles on it and it had a smaller S arc compared to the recommended trebles. if you're worried about catch and release you can try STBL-66 (barbless trebles)

  3. i don't own either reel but my reasons for going stella (5000)

    - you don't feel any urge to upgrade/change reel

    - high resale value if you need to

    - reliable and performs real nice

but since you're happy with the stradic, maybe you could spend your money on something that you're not happy with
