There are so many hooks to choose from i get a bit confused when i look at the shelf

Do you choose hooks to suit the bait or suit the fish? i do roughly know hook size for the fish though

baits i mainly use are:

Pilchards (cut or full)

Prawns

Bread

Squid (Live or stripped)

Yellowtail (Live)

Could someone give me a general guide as to which hooks to choose?

I use Octopus Circles from Gamakatsu for every type of bait fishing (except Poddy Mullet). Sizes 3 - 4/0 have caught me Whiting, baby and legal Snapper, Dollies, Flatties and countless others. Though I suppose any circle hook would do the same.

You suit the hook to the bait and the fish, example longshank hook suits Beachworms for bait and Whiting. The hook should be big enough for the fish but small enough to (if need be) concealed within the bait, maybe with the point showing.

The 3/0 or 4/0 size would be ideal for the Salmon, Tailor and Kingies you're going for mate.

Will you be out tomorrow morning?

I haven't caught anything at Lilli Pilli lately, so i'm trying somewhere else. I think all the Bonitos has finally gone. I might go back when the cooler water comes in and try getting salmon. Right now its warmer to be in the water than on land.

But I'll be heading to Kurnell tomorrow. Never fished there before so i'm going to see whats it like.
