Hi guys, took the new beast out for a run chasing bream.Had to move around a lot as they are still very scattered at the moment but in the end managed a reasonable catch.All were taken on top quality local prawns and as you can see compared to the calcutta 400 they are big ,fat well conditioned fish.

Well done Numbnuts. :thumbup: It looks like the river is starting to improve and we should be in for a good summer this year. Chosing the first day after a week of low pressure with a sharp rise from 1008 to well over 1020 while you were on the water was good timing mate.

Hey numbnuts,

were any of the fish in spawning condition?

I'm only asking because the bream in Botany bay are scarce on bait, but some are being caught on squidgies. I'm thinking that the reason they are not biting on bait is because they are breeding and that the main reason they are striking at lures (if striking at all) is that maybe it's out or some sort of breeding induced territorialism - I'm just curious.

I was bait fishing and only caught one with a nice 35cm whiting, but I noticed some of the lure chuckers were getting some fish. Not to be outdone, (ie monky see, monkey do), I did the same and managed a nice 35cm bream on a squidgie. My first ever, but I'm trying to work out when to use the plastic, and when to use bait.

By the way, them fish are all beauties - well done.

May I make a suggestion for cooking?

When the fish hit 40cm +, the skin gets rubbery and tough. The skin also doesn't taste any good at that size in my opinion. Before you grill the fish, skin it as you would a blackfish. Baste it with olive oil and add your fave herbs/spices - whatever you like.

If you leave the skin on, the skin will contract during cooking, bending and contorting the fish very badly. It will look awful and the flesh underneath will not taste so good as it didn't get the basting / herbs.

Score the fish 4 or 5 times per side to get even cooking.

I love my seafood - I fish exclusively for the table and you have a smorgasboard of seafood delights right there. Bon apetit....

HawkesburyDave;as I mentioned they are very scattered ,got a couple at the road bridge ,one at graces shore, sanitarium and Bar point reef. they are about but they are hard work .

Keflapod, They weren't spawning, but they had that thick fat lining in them which suggests they have been feeding up in preparation to form spawning schools ,so it should all be happening soon ( if the pro's don't net them all first ).

I always fillet and skin my bream after bleeding them then straight onto ice...that bit of extra care makes so much difference to the flavour.
