Queenslander Moving South

Hi, my wife and I are moving to somewhere in Central Coast area of NSW for family reasons in the near future. Looking for a coastal area where the living is good, with all facilities, but not too touristy. Coastal location with good estuary and/or beach fishing would be a very definite plus! We would really appreciate any advice or comments on this post please to help us in our decision making.
