Just cut right behind the spike and go through the backbone, then grab the head and rip it straight down. This will take all the guts with it, leaving you with the body. Then nick the skin at the top where you cut near the backbone and grab the skin and tear it back along the body. Do this each side and you are left with a cleaned leatherie. The skin can be a bit tough to rip off the body, but persevere as it comes off in one piece. When you get used to doing it, you can skin one in about one minute. I have never heard of meat in the head as it's pretty bony. One of the best eating fish there is. Cheers, Pete.
