Greetings fishraiders

fillet your striped tuna.

sparingly sprinke rock salt around the fillets.

leave in fridge for 4 days in a deep covered bowl.

then dust off as much salt as you can. cover with fresh water for 1 day.

change water, and have it covered for another day. to leach out the salt.

then allow it to drain.

the fish will taste fantastic as is.
