finin Posted November 15, 2011 Posted November 15, 2011 Gday all, just wondering how everyone likes to cook their leatherjackets. Have a heap here and would like to try a few different recipes. So if you can help out it would be much appreciated.
Guest twitchie Posted November 17, 2011 Posted November 17, 2011 Hi years ago i use to catch a lot of leather jacket i found they were better cooked simply nothing fancy put some plain flower and some corn flower in a bag about two table spoons of each a good grind of black pepper the same of salt and a 1/4 of a tea of lemon pepper place your fish in the bag give it a good shake prepare a pan with hot sunflower oil fry until golden brown and serve with a fresh crisp salad .
finin Posted November 29, 2011 Author Posted November 29, 2011 Twitchie, thanks for your thoughts . As you said simple cooking. Usually do all my fish simple anyway so thats what i did. Just butter in the pan... pan hot... put fish in skin side up... cook... eat... to easy. Nice too. Also did them as a rawfish... 2 tins coconut cream... 1 chopped tomato...1 chopped cucumber... juice of 2 limes, 2 lemons... salt and pepper to taste... whack it in the fridge eat in a couple of hours better after 24 with reef jacket as meat is firmer.
reyzor Posted November 30, 2011 Posted November 30, 2011 we caught a few over the weekend...... i jsut stuck em straight on the bbq...... the meat is so sweet its a shame to spoile the natural taste with anything.....
