4.JEWFISH ( i had to put this in, they are just so hard to catch and well yes they are a beautiful eating fish).

My preference:

1. Flathead in batter -- just over legal size, or a tad bigger.

2. Bream -- cooked any way.

3. Tailor, caught off the beach that evening and then grilled.

Alot of you have voted for flathead.

I have been hooked on flathead wings since being introduced to them by my father back in November, most (including me - well i used too anyway) fillet there flathead and disregard the head, wings/fins and skeleton.

Next time cut the wings off after filleting and BBQ with butter - :thumbup:

Aron, what do you mean by "Wings". I caught a nice flattie on Sunday along Long Island northern side. My first flattie & when filleting I found I had to cut small chunks off on a second go near back of head coz after first pass I could then see what I'd missed. It didn't really matter that the fillets were small chunks rather than one large fillet because my brother in-law cooked up small battered balls and they were lovely. However I think next time I'll be much more diligent with my technique & hopefully not waste anything. So where are the wings (Anyone point me to a good website with pics for filletting flatties?)
