The wood plank is soaked in water for about 30 minutes or more before you place it on the grill, so anything cooked on it stays moist. While the food cooks, the plank creates a smoky, mahogany glaze on the food, so even if you are using a gas grill, it will taste as if you used charcoal. Anything can be cooked on a plank, and one of the best things is fish, especially salmon. The main thing to keep in mind is that you can't use any piece of wood left over from building projects because many of them are treated with chemicals. You need to use clean, untreated wood planks, which you can find at specialty cooking stores or stores where barbecue supplies are sold.
