arpie Posted November 16, 2007 Share Posted November 16, 2007 Hi Cattfish Leatherjacket is considered to be one of the sweetest tasting fish out there - & sooo easy to deal with! Basically, just cut off the head & continue cutting along the body shape of the fish (the belly is soft & floppy, so follow the rib cage.) Usually you don't get any messy guts falling out or anything - the whole lot comes away in one piece! Sometimes a sharp pair of scissors works better than a knife once you cut thru the head. Then just work your finger under the edge of the skin till you get enough to grab & peel the whole skin off in one go - the skin is very much like a shark's. My girl has been joining me for a session here and there lately and she can't handle the fish getting hurt... She sure didn't like it when I bled a trevally a week ago.
