adkel53 Posted August 31, 2008 Share Posted August 31, 2008 Here is an alternative to the usual crumbed and fried fish. Not sure of its origins but it works really well with medium sized flathead (especially the chunky front and middle sections). Would also siut any larger white fleshed fish I think. It is also good with chicken breast fillets when fish fillets are hard to come by!! Start by filleting and skinning your fish in the normal manner. You will need 1 tbspoon margarine; melted (not hot though as it cooks the egg) 1 egg 2 tbspoons dijon mustard 1 cup fine dry bread crumbs 1/4 cup finely grated parmesan cheese OR 1/4 cup sesame seeds Then proceed as follows. Mix margarine, egg, and mustard together. Mix crumbs with cheese or sesame seeds. Dip fish first in the egg mixture then roll in the bread crumbs. Place on a lightly greased baking dish (or one lined with baking paper) Bake at 350 degrees for about 15 minutes. Serve with salad, chips, tartare sauce - whatever takes your fancy.
