Hi Guys, some of you may have seen my Ausy salmon thread and with so many of them about at the moment I thought I would share this recipe with you.

One salmon 3kg approx, clean, fillet, de boned and skinned.

dice up the meat, mince it all up,

I found cheap mincers on e bay.

mix the meat with one egg, a handful of crust, fine chopped onion and one tooth garlic, two to three table spoons olive oil, fine chopped parsley, a pinch of oregano and mix well.

make a few balls about the size of a tennis ball, smaller or larger if you wish, flatten it and shallow fry.

2 min each side and its done.

you can eat it just like a hamburger or any way you like.
