Basil D
After been to my local Chinese restaurant a few times in Beverly Hills and having steamed fish I asked the guy for the recipe, was gladly given the simple but effective recipe. Steam your fish for 10 to 15 min. Now separately add a cup of water to a saucepan and 1/4 cup soy sauce, a touch of oyster sauce, grated ginger, shallots and grated garlic, let simmer for 5 min. put your steamed fish on a plate and add the sauce straight over, that's it, simple and delicious. I cooked my wrasse that way today and most fish can be cooked this way as well, snapper, bream, reef fish, perch.

hottyscotty
a tip: don't just use any soy sauce, look for seafood soy sauce. its a sweetened version. or you could just add sugar into your normal soy but i don't think its the same. the saefood soy sauce is what they use in restaurants. GregL
One of the only ways I eat fish now, clean, healthy and tastes great! Bream is one of the best and the king is coral trout. It must be a "LIGHT" soy or it will be dark brown salty fish for dinner! I havent seen it cooked that way but sounds easy.
Basil D
sorry guys yes seafood soy sauce and if the taste of either soy is too strong just add water and bring to simmer ad sugar to the normal soy, not too much as it will defeat the purpose of steamed healthy fish. Thanks for posting this recipe mate. Very simple & sounds delicious. I've just copied & printed it so I'll let you know how I go next time I get some fresh fish to cook up. Cheers, Grant. you gotta try Bara that way too
