Jewiehaven Fish Cakes

Ladies and Gents,

I made my first batch of fish cakes on the weekend and I wanted to share the recipe with you all, so here goes:

Ingredients:

1 whole large fish

3 potatoes

a few spigs of Rosemary

2 Shallots

Bread Rolls

Ranch Dressing

Lemon wedges

Green Salad

Method:

1. Grab your favourite fish (I used a Sambo that needed to be cooked)

2. Fillet and debone the fish

3. Cut out the blood line

4. chuck the fish into a mincer and make into a paste

5. Chuck in 2 or 3 large potatoes in the microwave oven for 5mins until they are cooked

6. Mash up the Potoatoes

7. Grab some sprigs of Rosemary and 2 fresh shallots (chopped)

8. Bung everything into a bowl and mix in well together

9. Ball up the mix to make up 4 or 6 patties

10. drop in some flour

11. Shallow fry until golder brown and fish is cooked in middle

Serving:

Split the Bread rolls down the centre

Place a single fish cake

top with Ranch Dressing and the juice from a lemon wedge

Add Salad as desired

EAT!

I had some left overs for lunch today, just plain on a roll with the ol Ranch and gee it was great- even better next day of you reheat them in the microwave (just dont let them go rubbery)

... thats what inspired me to write up the recipe.

Guess you could use any herbs you like:

Basil

Chilli

Oregano

Spring Onion

the possibilities are endless.

Get out there an experiment with em, they go down a treat!

The only requirement is a nice cold ale (such as a Coopers or even better a Wahoo)

Just one question how do you cook the fish before you put it in the blender?
