Well raiders,

This sashimi includes a Fish known as the sawtail surgeonfish. Most people will be shocked :1yikes: but it has the most wonderful sashimi meat.

First catch one as you cant buy them from the shops.

Steps:

1. Skin the surgeonfish

2. Fillet it

3. Cut it into thin pieces

4. Add a dressing of your liking, mine is chilli,lemon or lemon,garlic.

Enjoy...

thanks for the info i have to try and get one first been smoked on 80lb line trying to get some monsters from around the piers at harbour they aint easy to land,

We had Snapper, John Dory, Silver Trevs and Kingfish as Sashimi in NZ, the kings and trevs being recognised as good sashimi fish were good as you'd expect but the john dory and snapper were also very nice which was a surprise, i think the trick to it is slicing it ridiculously thin, then some good soy and hot wasabi.

I find snapper & trev to be different in texture and flavour when sashimi'd.

Havent tired Dory but Kings and tuna are my fav.

...... and you're right about the wasabi and soy!
