twisty84 Posted May 12, 2012 Posted May 12, 2012 Battered some tailor and snapper fillets last night , concocted my own spice mixture and I thought i would share it because it was delicious The mixture consisted of Black whole peppercorns Rock salt Dried garlic flakes Place all in a mortar and pestal and grind away till all combined together and a bit powdery Then add to your flower And mix through them add your bottle Of beer and if needed flour to get the consultancy right ( i used gluten free sel raising flour as my fiancée cant have normal flour ) then coated the cut up fillets and fried in a pan of olive oil . So easy yet so tasty I can't wait to catch some more fish I have also used this salt pepper and garlic mixture sprinkled on peeled prawns in the fry pan with some olive oil also very delicious
