adamski Posted September 13, 2015 Posted September 13, 2015 Hey folks, Yesterday I went out and caught a couple of good-sized tailor. I've read they're a good fish for smoking, but I don't really have the facilities here... or so I thought. A quick trawl through youtube suggests it's possible to smoke stuff on your stove with rice, tea and a few other aromatics. According to the vids I've watched, you line a pan with tinfoil then chuck in the smoking ingredients, put a rack over the top and sit your fish on it. The whole thing then gets covered in another layer of tinfoil to stop the smoke escaping. Supposedly takes about 8-10 mins to cook a fillet from fresh. Just wondered if anyone's tried this method before and whether it's worthwhile. I know frying or baking would be a lot simpler, but I'm keen to try something new. Cheers, Adam

adamski Posted September 13, 2015 Author Posted September 13, 2015 Just be carefull smoking fish indoors , SMOKE ALARMS !!! Yeah, that was my first thought. I decided to just grill them this time round. First time eating tailor, they taste fine- I like the oilier-fleshed fish.
Ryder Posted September 13, 2015 Posted September 13, 2015 (edited) Watch out using tea, it can be over powering. I tried it for a recipe that called for smoked tomatoes, ended with Tomacco. Edited September 13, 2015 by Ryder

kiwicraig Posted September 14, 2015 Posted September 14, 2015 I do them on a hooded BBQ with a smoking box and either word chips or pellets in the box. You put the box over a med to low heat and the fish off to the side and close the lid. Couldn't be easier. Added benefit there are no smoke alarms on my deck.
Ocean Addiction Posted September 15, 2015 Posted September 15, 2015 I smoked a trout on my BBQ earlier in the year. My BBQ doesn't have a hood but found a video on YouTube that helped out. - make a pouch out of aluminium foil - put damp smoking chips into the pouch - slide it under the grill - heat it up until it smokes - heat goes down - fish goes on the grill with a upturned pot to capture the smoke Worked great. Im keen to try it on some slimies or yakkas.
fragmeister Posted September 15, 2015 Posted September 15, 2015 Interesting. I used to smoke fish all the time with an smoker my old man gave me. I reckon it was about 50 years old when he gave it to me but eventually it got tossed. I bought a new one from the camping shop but I could not get a decent result so I ditched that one too. I might give the BBQ method go. Thanks for the ideas and the post Adam.
