allen_f
+1 to the trevally sashimi, i gave it a go last week and i really enjoyed it. It has a nice sweet taste to it and the texture is a bit firmer than salmon. I love my wasabi strong and it goes damn well. If the sashimi isnt to your liking, fillet the trevally, cut out the centre spine thing on the fillet so thatll leave you with 4 fillets per trev. Lightly oil, sprinkle some salt and toss it into a pan on medium high heat for 2 mins, turn off the pan, flip and let it sit for another minute or so till the meat gets that nice seared texture. When you take it off the pan itll still be nice and moist. Sprinkle some pepper on and drizzle some lemon juice (if you want). Perfect little snack... Getting myself hungry just thinking about it :'(
