My action on the Gillies baitfish is that of spinning, if you reel in slower it moves from left to right and up and down more.

How do you mean eratically? I use the Gillies Baitfish lure and it swims fine. Maybe you're not reeling in fast enough mate, make sure you're getting some decent speed upon the lure otherwise the fish won't go for it. I use a 6-7 turn Uni Knot, it says 4 on the internet but they fail at 50% the strain for me.

You can get them a lot bigger than those ones though, I've seen 7-8kg FIN in them

You can target Jewies off Molineux Point and Captain/Tom Ugly's Bridge As for the Hacking, the deep areas around the baths look inviting however I've never tried it, only off the warf.
