Bad luck on the "Slippery Snapper" there Gordo but a couple in the bag is OK.
The fish in the photo is a Eastern Pigfish. Bodianus unimaculatus. Or just Pigfish.
I have seen a couple of Foxfish taken in Sydney over the years but certainly not a common catch those ones.

I have found firmer flesh fish is best, but as Fishythings said fry the softer flesh first.
Kingfish, Trevally are really good.

Arnie, Tarwhine grow BIG, but the bigger ones i've seen have been when I'm diving and more out side then in the Estuary.

Yes there is a couple of Tarwhine there.
Considering the amount of Bream taken in our East coast, your few will not make a difference, but saying that, if your aware of sustainability and every one tries their best thats great.

Really simple, just do a one turn Catspaw knot.

Peter not sure what you're after but it looks like you just thread the cord thru the hole them turn the ring back over itself like your making a cats paw. Is the problem connecting to the split ring.
Looking at the photo on the YouTube clip is this what you mean. Not the opening of the clip but where you see the split ring.
