hi ...i salt pippies, cunjoi, tailor fillets, and bonito pippies and cunjoi in plastic jars..tailor ant bonito cut to slabs then onto a tray and left overnite in fridge then into glad cliplock bags..and i use course butchers salt...use to do pillies but now buy them already salted..but dont be afraid to try what you thinks works for you.. i keep these in freezer for my annual trip tp hat head every june..never had a problem....bob
